Quick Miso Soup
Makes: About 2 bowls
- 3-4 cups of vegetable broth
- 3 tbsp of white miso paste
- ¼ cup of silken tofu
- ½ cup of chopped scallions
- 1 tsp of Atlantic Wakame Soup Booster
Warm up the vegetable broth in a saucepan on medium-low heat till it's simmering at the edges (5-8 minutes). In a separate bowl, heat up 1 tbsp of water and whisk in 3 tbsp of white miso paste. Cut the silken tofu into little squares. Add the miso, tofu, scallions, and Atlantic Wakame Soup Booster to the vegetable broth. Cook for 3-5 minutes on medium-low, then turn to low until you’re ready to serve.
